As babies under 12 months can’t have honey, if you want to break them up and share with a baby who’s under 12 months, you can always skip the honey. For a dairy-free snack bar, simply use coconut oil instead of butter.
INGREDIENTS
- 150g oats
- 1-2 small carrots, peeled & finely grated
- 2 small apples (or 1 large), finely grated
- 2 small apples (or 1 large), finely grated
- 1-2 tbsp coconut oil/butter*
- 1-2 tbsp honey/maple syrup**
- 1/2-1 tbsp cinnamon or ginger
- handful of chopped, dried fruit (optional)
*use coconut oil or a dairy-free spread if your baby has CMPA (cow’s milk protein allergy)
**Don’t use added sugar if your baby is under 12 months (babies can’t have honey under 12 months due to the risk of food poisoning).
METHOD
- Pre heat your oven to 190°C
- Mix together the oil/butter & honey in a pan over a medium heat before adding the carrots & apples – stir to combine.
- Mix together the oats, chopped dried fruit (optional), & cinnamon/ginger in a separate bowl before adding to them the grated apple, carrot, oil and honey mix. Stir to combine.
- Press the mixture into a square baking tin or pyrex dish & bake for 15-20 minutes until golden. Allow to cool at room temperature before cutting into 15 rectangular bars.
- Enjoy! Store in an airtight container in the fridge/freezer for later!
